From kitchen and cellar
Perch, lamb loin, meringue
We cook what the Seeland provides: whitefish and perch from Lake Murten, root vegetables from the Grosses Moos, lamb from a farm on Mont Vully. The sauces simmer for two days and we bake our own bread.
Perch fillets from Lake Murten
CHF 38.50Pan-fried in butter, with lemon thyme and mashed potatoes. The fisherman brings them to the back door in the morning.
Crispy whitefish with sauce tartare
CHF 34.00Thin beer batter, deep-fried in rapeseed oil. Served with green salad and strips of beetroot from the Grosses Moos.
Lamb loin from Mont Vully
CHF 46.00Roasted pink, with bean bundles and potato gratin. The jus is made from the bones of the same animal.
Veal bratwurst with onion sauce
CHF 29.50From the butcher on Hauptgasse, finished in the oven. Served with rösti made from firm potatoes.
Beetroot risotto with Vully cheese
CHF 27.00Beetroot from the Moos, slowly reduced, with shaved semi-hard cheese. Available as a main course or a small portion.
Meringue with double cream
CHF 13.50Dried for two hours at low heat, which is why it stays soft inside. Served with preserved plums from our own jars.

About us
An inn since 1954
The house on the Dorfhalde was a wine press for many years before Emil Brügger set up the first dining room in 1954. Since 2011 Andrea Brügger and Marc Zbinden have run the inn in the third generation, with eight staff and a kitchen that can be seen from the dining room.
The name comes from the beech tree in front of the house, whose bark looks silvery in the evening light; in summer nine tables stand beneath it. We buy where we can drive to: fish from Lake Murten, vegetables from the Grosses Moos, wine from Mont Vully.

Costs, deadlines, cancellations
The same questions come up on the phone every day. We answer them here so you know what to expect before you confirm a table or an event.
Roughly what does dinner cost?
A main course is between CHF 27.– and CHF 46.–, the four-course menu is CHF 86.–. With two glasses of wine and water, expect around CHF 70.– to CHF 110.– per person.
How long does lunch take?
The lunch plate is usually on the table after twenty minutes. Tell us when reserving if you need to leave again by 13.00, and we'll plan the kitchen accordingly.
Until when can I cancel?
Free of charge up to 24 hours beforehand, and for groups of twelve or more up to 72 hours beforehand. After that we charge CHF 25.– per person, because the shopping has already been done.
How far ahead do I need to reserve?
During the week the same day is often enough. For Friday and Saturday evenings and for the garden under the beech tree we recommend a week's notice, and two to three months for events.
Do you also cook without meat or gluten?
Yes, there is at least one vegetarian main course on the menu every day. Please mention allergies and intolerances when reserving, and the kitchen will adapt the whole meal.
Do you accept cards and Twint?
We accept cash, debit and credit cards as well as Twint. On request we issue invoices for company events with thirty days' payment terms.

The house stands on the Dorfhalde, a good ten minutes' walk above the old town of Murten. The easiest way is to walk up from the station or to drive along the Dorfhalde right to the door.

On foot from the station
From Murten station the route leads through the old town and then gently uphill to the Dorfhalde. The final climb is short.
By car
Access is via the Dorfhalde, with the entrance right next to the large wooden gate. Access for deliveries is possible.
Parking in the courtyard
There are six of our own spaces behind the house, gravelled and marked. If they are taken, you will find further spaces in the old town.

Closing days and holidays
The house is closed for two weeks over Christmas and New Year, and likewise during the last two weeks of July. Events are also possible on our closing days.

Lunch plate of the week
From Wednesday to Friday a lunch plate with soup or salad comes to the table, usually served within twenty minutes. On Monday and Tuesday the kitchen stays cold, but on Sunday we cook all day.

Boiled beef with horseradish sauce
CHF 24.50Beef from a farm between Murten and the Moos, simmered for three hours. Served with salted potatoes and pickled vegetables.
Thursday
Perch in beer batter
CHF 26.50The morning's catch from Lake Murten, filleted small. With potato salad and a wedge of lemon.
Friday
Sliced veal with rösti
CHF 27.00Cream sauce with white wine from Mont Vully, thickened without flour. The rösti comes to the table in the pan.
Saturday
Vegetable strudel from the Moos
CHF 22.50Leek, carrots and celeriac in thin puff pastry, with herb quark. The filling changes with whatever the vegetable grower delivers.
Reservations
The wooden gate on the Dorfhalde
Behind the wooden gate lies the courtyard, and to its left two steps lead to the dining room door. On the phone it is usually Andrea Brügger who answers, and in the afternoon also Marc Zbinden from the kitchen.
It is best to call between 10.00 and 11.00 or after 15.00, when we have time for your questions. Feel free to mention allergies, high chairs and menu requests right away.
